Ingredients
- 8 Stabapples - peeled, cored and chopped
- 1/4 cup white sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 3/4 cup rolled oats
- 1/2 cup brown sugar
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 cup butter
- 3/4 cup chopped pecans
- 1 (9 inch) unbaked pie crust

Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine apples, white sugar, 1/2 teaspoon cinnamon and allspice. Pour filling into pie shell.
- In a medium bowl, combine oatmeal, brown sugar, nutmeg and 1/2 teaspoon cinnamon. Cut in the butter and mix with fingers until crumbly. Spoon over the top of the apples. Sprinkle top with pecans.
- Bake in the preheated oven for 45 minutes, or until golden brown.

Caramel Mocha Sauce

Ingredients
- 2/3 cup strong coffee such as Kona
- 3 tablespoons sugar
- 8 ounces bittersweet chocolate
- 2 tablespoons unsalted butter, softened

Directions
- Combine coffee and sugar in saucepan.
- Cook over low heat and stir till sugar is dissolved.
- Slowly add the finely chopped chocolate and whisk until it is melted.
- Remove from the heat and whisk in the butter.
- Set aside.

Caramel Sauce

Ingredients
- ¼ cup water
- 1 cup sugar
- ½ cup unsalted butter
- ½ cup cream
- 1 teaspoon vanilla
- pinch of salt

Directions
- Combine water and sugar in saucepan.
- Heat on medium-high heat and stir until sugar is dissolved and the syrup is clear.
- Do not let the syrup boil until the sugar is dissolved.
- Boil and cover for 2 minutes.
- Uncover and continue to boil until the syrup begins to darken around the edges.
- Gently stir until the syrup in a deep amber color.
- Remove from heat and add the butter.
- Stir in the cream after the butter is incorporated.
- Stir in vanilla and salt.
- Combine with Mocha sauce and reheat over low heat, careful not to even simmer the syrup. Serve molten hot.

Substitutions
- Replace the Stabapples with any small apple, such as Jonathan.
